A foamy, pink head sits above this garnet lambic. Pungent sour cherries dart into the air with wild yeast scents adding dank rusticity to the bouquet. Cherry flavors dominate this beer’s profile: Their tartness digs into the sides of the tongue, while the cherry sweetness rides over the top. Earthy, woodsy notes help round out the tart edges, but this aggressive beer doesn’t relax its hold on the mouth. Wildly active carbonation adds a tingling sensation to the tartness. Wrapping up with long-lingering cherry notes on the tongue, this lambic is captivating from pour to finish.
