There is good reason why this is one of the most well-known lambics in the world: It is among the most drinkable spontaneously fermented beverages ever made. The raspberries balance the sour flavors inherent in this beer so beautifully that you wonder if any other fruit should ever be added to beer. Its aroma is dominated by this raspberry, and while we would love to see a little more yeast presence here, it is nonetheless enjoyable. The flavor is very sweet but not cloying, and the raspberry flavors are superb. The yeast could use a little more attention in the flavor, too, but there is enough sourness to balance most of the sweetness. Even though this beer is not necessarily the quintessential lambic in terms of style guidelines, it is in the hearts of most consumers.
