This is the only lambic we tried that doesn't have some variation of fruit added to it. thus, this beer is a good starting point for your own tastings if you're venturing into the world of wild yeasts. Lindemans makes a classic example of this style by blending two-thirds young lambic with one-third aged lambic. The result is a brew with an aroma and taste that has some strong earthy, haylike characteristics, some acidic sour notes and even some aged cheese smells. The taste is quietly acidic and seems to get better with every drink. Hops are used in lambics for their preservative qualities, but they are so old, you won't notice any bitterness from them. The body was too thin to be called perfect, but this brew was very refreshing from start to finish.
