DRAFT REVIEW: Old Dipsea
RATING
95

This world-class barleywine starts with a gorgeous pour that cascades clear and orange-gold and concludes with a big, rocky head. The bouquet swells powerfully; dark fruit and toffee fill the nose, peppered with citrusy hop scents. Soft, fruity sweetness greets the tongue before it buckles into weighty caramelized malts and powerful alcohol warmth. Emerging clean and spicy, hops brighten the flavor with a twist of grapefruit and lingering bitterness. This beer’s ready to drink off the shelf -- the aromas and flavors blossom at room temperature -- but would benefit from time in the cellar, allowing the hops and malts to become better acquainted.
