Pouring pale gold in color and displaying a healthy white, fluffy crown, Le Merle is as approachable as it is quenching. Its aroma impresses too, with notes of honey and fresh-cracked pepper, alongside hints of dried flowers. This isn’t a sipping beer; in order to really appreciate the flavors and complexity, let a mouthful coat your palate, and notice straightforward sweetness similar to hot buttered rolls. There’s a tart quality to this beer as well -- slightly acidic, but not sharp, and wonderfully refreshing. The carbonation is lively, with tight, tiny bubbles scrubbing the tongue clean and leaving the mouth slightly dry. Le Merle finishes clean, with no residual bitterness and only a gentle sweetness on the tip of the tongue.
