Polestar certainly looks like a German pilsner, bright and straw gold with an opalescent head. Honey-sweet malt scents take center stage in the nose, with flowery hops in the background. However, the flavor flips the balance over to the hops. While the beer starts with a sweet malt presence, the flavors don’t last long before being overtaken by grassy, floral hops that provide quite a kick to the finish. Hops stick to the palate, imparting a bit more bitterness than traditional versions. However, just as expected in a pilsner, Polestar is light-bodied, highly carbonated, and has only mild alcohol notes.
