The production and formulation of this clean, crisp witbier was overseen and directed by Pierre Celis, who invented Hoegaaden and Celis White. A second fermentation in the bottle to carbonate the beer gives the yeast a chance to expand the flavor profile. These soft, fruity esters from the yeast blend with the orange peel to create a very mild tartness and lemongrass flavor. Minimal hops make this beer perfect for the style, and the soft wheat lends it the classic white appearance. Wheat notes in the flavor also make this beer ideal for a witbier, but more importantly, they make it more enjoyable. In the aroma, the spice plays a vital role, but in the taste, it is not prominent enough. This beer is proff that an expert such as Celis can still make an excellent beer after several years away from a brewery.
