Originally, porters were developed by mixing a mature, old ale with a younger light brew. Eventually, brewers decided to create the style in a brewhouse instead of off the tap. The innovation has been great for the porter style, but it could be argued that some of the romantic art of brewing was lost when beers were no longer mixed. With this porter, St. Peter's has brought back traditional brewing methods and merged it with modern technology. The brewers blend two lighter brews to create an amber brew with the flavor and aroma of roasted grains and even molasses. This brown porter also bears the sour notes that were once typical of all porters, another welcome revival of Old World traditions.
