Open Category Mead 

Specialty meads or versions that combine sub-styles fall into this “open” category; examples include fruit-and-spice meads, vegetable meads, acerglyn (a maple syrup mead) and bochet (mead that features caramelized honey). Appearances, aromas and flavors vary widely, but all should display subtle to intense notes of honey in both the nose and taste that harmonize well with the additive.
