While the more common pyments (grape meads) and cysers (apple meads) have been extracted from the melomel category (fruit meads), the rest of the bunch falls into this catch-all group, which includes meads crafted with any fruit. As with all meads, melomels should appear clear and offer a subtle to strong honey character in the taste and nose. The rest of each melomel’s profile is determined by the fruit: melomels may vary widely in color, sweetness, tartness and alcohol presence, but should always display the characteristic aromas and flavors of the added fruit.
