American IPA 

High-voltage versions of the original English style, American IPAs unapologetically shove American hops into the spotlight. They begin with aromas that burst with American hop characteristics like citrus, flowers, pine and fruit. They offer a teensy hint of malt—weaker than English versions—and a grassy essence if the beer was dry-hopped. Alcohol and fruity esters are optional but acceptable. Hops intensify in the taste; the same hop characteristics of the aroma are full-blown in the smooth, medium body (less full than English IPAs), providing a high, sometimes puckering hop bitterness. A clean malt backbone should provide some balance, but aggressive hops should overtake the swallow. ABVs range from 5.5% to 7.5%.
Pair: American IPAs’ bold hops complement equally flavor-forward dishes: They’re a good match for blue cheeses, mole and curry. For dessert, try one with crème brulee; the dish’s creamy texture gives the palate a thick base for the beer’s dry finish.
