Parading a cloudy, straw color and foamy, white head, Bam appears to be a textbook saison. The fragrance, however, is wilder than expected, with sharp acidic scents that are both sweet and lemony. The swallow is complex; the first wash expresses a light wheat and soft, biscuity barley flavor, followed quickly by powerful lemony acidity. The sourness is not overpowering, but certainly more pronounced than expected in the style. However, the beer is very crisp and finishes dry, maintaining the refreshing nature saisons are known for.
