Portland, Oregon’s polished-but-comfortable Nostrana (owned by multi-James Beard Award nominee Cathy Whims) is dedicated to introducing diners to Italy’s best craft brews, with bar manager Douglas Derrick special-ordering bottles of imported Chocarrubica oatmeal stout, Viaemilia dry-hopped pilsner, and Malthus Birolla, a carbonated chestnut ale by Birrifico di Como, among others. “The best response has been [through] offering pairing options and presenting them to the table like a bottle of wine,” Derrick says. Suggestions? Pour the Rubica stout with dessert; the nutty Malthus pairs well with smoky items hot off the Nostrana grill.
