DRAFT Favorite: Meddlesome Moth

Dallas
Apparently, being the mastermind behind the prolific Flying Saucer beer bar chain wasn’t enough for Keith Schlabs. His newly opened Meddlesome Moth is a slick addition to his portfolio, spotlighting gastropub fare like Prince Edward Island mussels and meat pies—both done multiple ways—alongside 40 taps and two casks. To keep the barrel selection top-notch, Cicerone and cellar manager Matt Quenette sends up to eight firkins out to breweries to be filled with unique, rare suds like Oskar Blues Old Chub aged with vanilla beans. Swing by the bar to quiz Quenette on the best beer/food pairings. His go-to pair? “The Five Spice Pork Belly dish with either something malty to chill the spice out, like Avery Ellie’s Brown Ale, or a nice IPA to enhance it, like Ska Modus Hoperandi.”
