A star chef’s “beer” cocktail.

Like many dishes at renowned chef José Andrés’ Beverly Hills outpost The Bazaar, known for playful culinary creations like foie gras cotton candy, the Spanish Golden Ale brew isn’t exactly what it seems: Concocted by master mixologist Lucas Paya, what looks like a glass of Duvel is really a powerful potion of Amontillado sherry, gin, chocolate bitters, gold dust and tonic, with a spritz of “lemon air” on top, creating the illusion that you’re drinking a pint of Belgian ale and proving that imitation truly is the sincerest form of flattery.
