This complex brew is only crafted once a year in December when the Belgians are celebrating St. Nick's Day in early December. It is then aged and refermented in the bottle to create the complex taste that erupts out of the bottle. The malty aroma has hints of scotch and the soft notes of fresh peaches. The body is pleasantly warming, which is expected from the 9% ABV and the hearty amount of malt that is used. All this works together wonderfully with the slightly sweet brown sugar notes in the flavor. The bitterness finishes the brew cleanly and will leave you wanting to take just one more drink.
