Brush this Southwestern glaze over chicken, fish, seafood or pork; its high sugar content makes it prone to burning, so paint it on meat just before it’s done, marking each side on the grill to let the glaze caramelize a bit.
Makes: makes about 1⁄4 cup
Ingredients:- 1⁄2 cup lager
- 1⁄4 cup honey
- zest of 1 lime
- 2 tablespoons lime juice
- 1 tablespoon chopped fresh mint
- 1 tablespoon white rum
Instructions:
Bring the beer, honey and lime juice to a boil in a small saucepan over medium heat. Cook until reduced to 1/4 cup, about 3 minutes. Stir in the mint, lime zest and rum, being careful not to let the glaze thicken too much. (If it does lose viscosity, just reheat it, stirring constantly, until it reaches a brushable consistency.)
